‘Cordiales’ are a
famous traditional Christmas dessert from the South East of Spain. They are
easy to make, healthy and delicious.
INGREDIENTS:
- ½ KG OF SUGAR
- 1 KG OF GROUND ALMONDS
- 6 EGGS
- LEMON ZEST
- ANGEL HAIR
METHOD
All of the ingredients
are mixed and moulded by hand in the shape seen in the photo. They are put on a
tray and baked for half an hour at 180 degrees.
ESSENTIAL INFORMATION
Angel Hair is harder
to acquire and is obtained from pumpkins, it can be found tinned, but if you
are not able to obtain it then it does not make the ‘cordiales’ less delicious
without it.
The ingredients are
rich in Healthy Fatty Acids, Vitamins A, B, C, D, Iodine, Vegetable Proteins
and Antioxidants. Eventhough it contains sugar, which amounts to empty proteins
without any nutrients, the remaining ingredients and eating them in small
quantities, makes them a spectacle of flavours during these Christmas
festivities.
Due to the high amount
fibre that they contain, only eating two of them after the Christmas
celebrations will make you feel full and will make the need of eating sweet
things, which is so common during this time, disappear.
